#10 – Energy Balls

ImageA healthy no-bake snack to avoid turning on the oven this summer!

1 cup nut butter of choice
1 cup date syrup
3 cups quick oats
1/4 cup chia or flax seeds
1/2 cup chocolate chips or cacao nibs
1 cup dates, diced

Combine the nut butter and date syrup in a large mixing bowl and stir until smooth. Gradually add the oats and chia seed or flax seed. Add the cacao nibs or chocolate chips and the dates, and mix gently to combine.

Use your hands to roll the mixture into 1-in. balls. Place the balls in paper mini-muffin cups. At this point, you can eat them, but they’ll be less sticky after a night in the refrigerator. Layer the balls in an airtight container, using wax paper to separate the layers, and refrigerate for 7 to 10 days or freeze for up to 3 months.

#11 – Coffee Creamer

Genius. For those folks who do love coffee creamer, who would not want to give this little recipe a try?

Idea and recipe from a date syrup fan:

 

1 can of coconut milk
1/4 cup Cocoa
1/4 cup date syrup or more for extra sweetness
1 Tbsp of your favorite extract
Mix well and stir a Tbsp or two into your coffee! YUMMY! No more artificial creamers!

#13 – Bluberry Scones

Right in time for blueberry season – these look awesome!

Blueberry Scones made with Date Syrup!

3 Cups of Flour
3/4 cup of cold butter cubed
1/4 cup Date Syrup
1 tablespoon baking powder
1/2 teaspoon of salt
1/2 teaspoon baking soda
1 cup of dehydrated blueberries (you can use fresh ones as well)
1 teaspoon vanilla
1 cup of buttermilk
Mix flour and butter well before adding the other ingredients. Roll dough out in a circle or two small circles, slice like a pizza to form triangles. Place on cookie sheet or hot stoneware. Brush with melted butter or heavy whipping cream and dust with cinnamon and sugar.
Bake @400 for 14-16 minutes in a regular oven
Bake @375 for 12-14 minutes in a convection oven
